Apigenin, a flavonoid compound extracted from plants such as chamomile and parsley, is found in relatively high concentrations in celery seeds and is widely used in health applications. Its molecular structure contains three hydroxyl substituents, conferring antioxidant and anti-inflammatory properties. Beyond celery, apigenin is also found in chamomile, bee balm, perilla, verbena, and other plants. Its concentration in celery typically ranges from 0.01% to 0.1%, while celery seeds contain significantly higher levels.
